Does anyone know a simple consistent recipe for Spanish or Mexican rice or someplace to get a prepackaged mixture. The only stuff I know of is the old elpasso in a box and I don't have much luck with it.

I still haven't gotten my Mexican/Spanish rice fix... "little boy whistles and wistfully looks toward the ground while aimlessly kicking an old tin can..." :?

I just bought a few boxes at Superstore the other day, in the cube boxes. I think "Dainty" is the brand.

Go to a foodservice wholesaler (like ADL) where you can buy boxes of Mexican Rice. It has been the best Mexican Rice I have had.

With the left overs the next day I usually fry up some Fajita chicken (also ADL) then stir in the left over rice. After heated spoon unto a plate top with salsa sauce and meal #2 complete
