Soooo...trying to get a bit healthier....joined the gym *gasp*.....and trying to eat healthier.

Love salads, but looking for some changes. What are some of your favorite things to put in a salad? (no fish please!)

My favorite salad is the Panzanella.
This looks like a decent recipe.

Go very light on the vinaigrette. If you have fresh ingredients you don't need much.

You can add grilled chicken etc. or keep it veggie with some grilled artichokes, asparagus and peppers.

Also, for the vinaigrette I've been using "Liquid Gold" products.
For this salad a combination of the Blood Orange olive oil with the Oregano infused White Balsamic works very well. No other ingredients needed.

This one is a real favourite at our house. It comes from Kraft.

Southwest Layered Salad

6 cups torn romaine lettuce
1 can (19 fl oz/ 540 mL) black beans, drained, rinsed
1 can (12 fl oz/341 mL) corn, drained
1/2 cup salsa
1/2 cup tex mex Shredded Cheese
1/4 cup ranch dressing
1 cup broken tortilla chips - optional

Place lettuce on serving platter or in bottom of glass serving bowl.

Cover with layers of beans, corn, salsa and cheese.

Drizzle with dressing; sprinkle with chips.

It's great, a bit like rice, has a nice nutty flavour and great texture. It's also high in protein and is one of the super foods being considered for long term space flights.

It can be purchased at bulk barn and most grocery stores in the healthy foods section. Cooks a lot like rice and is great warm like rice or cold in salads.

It can also be malted (sprouted) and used in all grain home brewing too! ;)

mmm. Salad. Here's my go-to salad recipe

- Baby spinach
- Red onion slices
- cherry tomatoes, halved
- berries (blueberries, strawberries, whatever berries you like!) or green apples slices (or both!)
- pecan or walnut pieces
- dried cranberries
- bit of crumbled goat cheese
- red pepper flakes
- chopped up chicken (i'll make an extra breast or if we made a whole chicken, cut some up on the side to add to a salad for my lunch the next day)
- balsamic dressing (i love homemade dressings, but for convenience sake, i keep a bottle of whatever balsamic dressing was on sale at the Superstore in the fridge at work. don't need a whole lot!)

For extra deliciousness, sometimes i add some black beans or some corn.

This is a bean salad recipe that a friend gave me. You can add it on top of some salad greens, or eat as is!


Here's the recipe, enjoy!

For most of these you can just decide how much you want:

Rice
Black beans
Corn
Red pepper
Celery
Red onion
1/4 cup chopped fresh cilantro

Dressing:
3 Tbsp lime juice
6 Tbsp olive oil
Salt and pepper
1/2 tps cumin
1/2 tps chili powder
1/4 tps corriander seeds
1 minced garlic clove

Mix and pour over salad. Enjoy!
