Hi Campfollower! You know, I was thinking about that last night when I was trying to fall asleep and I thought I might have goofed! I'm gonna change it right away! Thanks so much for reminding me! I am going to change it to say that you just need to add some oil to the pan.

If you use a non-stick pan, you should be able to get away without the oil - let me know how it goes! :-)

Thanks, I will certainly try this one. Currently I have my house up for sale so any frying, particularily fish, is off limits for the time being.

I've made these several times and the trick to getting a nice soft centre is to watch the time. This recipe says to bake 15 minutes but check it at 10 to 12 minutes cause everyone's oven is different.

What happened to her website?, I really enjoyed some of her recipes, her lemon sole and the asparagus soup was excellent. My other half, who hates ALL seafood, even mildly enjoyed the lemon sole..........hope she keeps posting someday, but its not looking good, its been near a year........

I'm so sorry I stopped posting on my blog! Unfortunately, life got in the way and it was so much work... :(

So I promise when I find and/or create a new recipe that I love, I'll post it in this forum...

Here's one that it so good - if you love spicy Chinese food...

General Tso's Chicken

Sauce:

1/2 tablespoon cornstarch
1/4 cup cold water
4 garlic cloves (sliced)
1/2 teaspoon ginger
1 tablespoon honey
1 tablespoon soy sauce
1/2 tablespoon red pepper flakes

Begin sauce in large bowl, mix together 1/2 tablespoon cornstarch and 1/4 cup cold water until smooth. Add garlic, ginger, honey, soy sauce, and red pepper flakes. Set aside.

1.5 tablespoons cornstarch
1/2 teaspoon salt
1/8 teaspoon pepper
2 boneless skinless chicken breasts cut into 1 inch pieces
2 tablespoon vegetable oil
4 scallions (thinly sliced greens only)
1 teaspoon sesame seeds

white rice
1/2 pound broccoli, blanched and cut into pieces

Mix cornstarch, salt and pepper together until combined. Add chicken and and toss until coated.

Heat a large nonstick skillet with vegetable oil. Shake excess coating off the chicken and cook until golden, 4-6 minutes.

Add the broccoli and sauce mixture and cook until the sauce has thickened.

Serve over rice and add scallions and sesame seeds for garnish.

Your lemon sole was great, the only seafood I have been able to make my wife eat and enjoy, I lost the recipe and your domain has expired, if you could paste the recipe in here it would be greatly appreciated, I don't need the pics, just the ingredients, I know it was fairly simple but just can't remember it %100
