Anyone here make their own salsa? If so, what is your recipe? Hotter the better!

whoa, there is a pei cook book section? that is too funny. i was scratching my head trying to figure out where this was getting moved to, but now i know.

i would consider this to be the ultimate humiliation, to have a thread moved to the pei cook book section.

12 cups chopped tomatoes , 1 whole stock of celery, 2 cups onions, 1 medium green pepper, 1/4 cup pickling salt. ,sprinkle salt over mixture and let set overnight or for 4or 5 hrs. then drain excess water. Put in pot. Add 2 cups white sugar, 1 cup vinigar, and 2 tsp mustard seed, 1 1/2 tsp cayanne pepper (more if you like it hotter) and 2 six ounce cans of tomato paste. Boil for 10 mins and then add 1/4 cup of water, mix 3 level tsp corn starch (to thicken) simmer on slow boil for 1/2 hr. should make about 6 bottles, use new lids. this is the most addictive salsa you have ever eaten!!!!!!!

1.5 teaspoons of cayenne pepper for 12 cups of tomatoes? Why bother putting any in? :lol: I'd be putting in 1.5+ tablespoons or better yet fresh hot peppers minced up and put into the mix.

since i figured most people would adjust the cayene pepper to taste and add hot peppers if they like it hot...i didnt bother to add that....plus i figured if they checked out the other thread i mentioned..they would find that out from other recipes...i always alter a recipe to suit..lol
