 Post subject: Halibut with Thai Curry Sauce

Made this last night...if i make it again, i'd add way more curry paste. As is, it's pretty good, but i'd like it better with more curry, personally!

* 1 can(s) (13 1/2- to 14-ounce) light coconut milk
* 1 teaspoon(s) grated peeled fresh ginger
* 1 teaspoon(s) brown sugar
* 1/2 teaspoon(s) Thai red or green curry paste or curry powder
* 1 clove(s) garlic, finely chopped
* 4 piece(s) (about 6 ounces each) skinless halibut fillet
* 2 green onions, chopped
* 1/4 cup(s) (firmly packed) fresh cilantro leaves, chopped
* 1 lime, cut into wedges
* Cooked basmati or jasmine rice


1. In nonstick 12-inch skillet, whisk coconut milk, ginger, brown sugar, curry paste, and garlic until blended; heat to boiling over high heat, stirring. Reduce heat to medium-low and cook 5 minutes, stirring occasionally.
2. Add halibut fillets to skillet and cook 4 to 5 minutes on each side or just until fish turns opaque in the center. Transfer halibut to warm deep platter. Remove skillet from heat. Stir green onions and cilantro into sauce in skillet; pour sauce over halibut. Serve halibut with lime wedges and basmati rice. Nutritional information given is based 1 serving without rice.
