 Post subject: Vegetable oil substitute?

I was going to make my zuccini muffins tonight but I am out of vegetable oil. Can you replace it with anything? I only have olive oil and extra virgin olive oil - and I imagine the taste of either of these would come out in the muffins.

Suggestions?

Olive oil will work well and there will be no noticeable flavor change. If anything it may enhance the flavor.

Either one. The regular is cheaper and there won't be a big difference in flavor so you probably should go with the regular.

Virgin oil contains no refined oil and is known for its superior taste.

Depends on the recipe.
Perhaps a little extra sugar and extra baking powder/soda.

Unfortunately the things that usually make our food taste so good and make muffins lighter are the things that are not so good for us.
